Sandbakkels

(A Norwegian Cookie)

Cream together:

1 C. Butter

1 C. Crisco shortening

Add:

¾ C. White Sugar

¾ C. Brown Sugar

Cream together and add:

2 Eggs

Gradually add:

5 C. Flour

Ground Cardamom to taste: 1 or more tsps

Almond extract to taste as well can be added 1 or more tsps

( I rarely put almond in Sandbakkels as I am a cardamom addict: I put 2 to 2 and 1/2tsps of cardamom alone in this recipe.

Taste the dough and the cardamom and decide how much you want to add; the same applies with the almond extract.

(I buy it in the pods and grind it in a pedestal and mortar.

I keep it frozen when not in use, as it is more potent and fragrant this way as opposed to buying it pre-ground

and as it is a costly spice the fresh pungent pods really enhance the flavor.)

Chill the dough overnight and press thinly and evenly into Sandbakkel Tins and bake on a cookie sheet pan.

Bake at 350 degrees until golden brown. Invert the tins while they are still warm and carefully jar them from the tins.

Before you reuse the tins they need to be cleaned by washing and drying or thoroughly wiping them free of crumbs with a cloth/paper towel. I usually dry them in the warm oven inverted on a cookie sheet in my final clean up.

Sandbakkels are worth the extra effort and sore fingers

Pecan Tassies

The Crust:

Cream together 1 C. Butter and 6ozs Philadelphia Cream cheese

Add: 2 C. flour and Chill 1 hour

The Filling:

Beat together:

2 Tblsps melted Butter (Cooled)

1 and 1/2C. Brown Sugar

¼ tsp Vanilla Extract

2 large Eggs

Press the dough thinly and evenly into mini muffin tins or mini Sandbakkel tins

Sprinkle with a pinch of chopped Pecans.

Fill with filling mixture about 1/3 full and sprinkle the tops with more chopped Pecans.

The easiest and cleanest method I have found to fill the filling into the tins is by injecting with a syringe from a doctor or pharmacy or a flavor injection syringe.

Bake at 350 degrees for 15 minutes; then reduce your oven to 250 degrees and bake for 10 more minutes depending on your oven.

I use this with my oven >Bake at 350 degrees for 25 or more minutes until the crust is golden brown

Isn't it ironic that more often that not, we never feel any older than we did that fleeting moment of time, when in all aspects we were at our very best!!! That bright shining sterling hour of undaunted youth!!!

Then, in the falling away of our youth, we looked into the mirror and what an astonishing affront age has inflicted us with!!! Our earth suits are waxing old and wearing out!!! Strange isn't it???, how our Hearts were made to stay Forever Young and Vital; more Exquisitely Beautiful than ever...constantly and unwaveringly becoming more polished than the finest of all priceless gems!!!

Perhaps GOD in His infinite wisdom and ageless agedness hoped that we, when we arrived at our finite wisdom and twilight age would be finally able to look and see with our hearts where Truth and Beauty Really emanates!!! At long last to finally, see one another as we are seen by GOD...The Searcher of All Hearts!!! Oh the infinite Patience and Wisdom of GOD!!!

Well we'll see --I didnt get to get that far with Arlo--just that he has adream to get it done--Im aware folksingers who own churches, feed hundreds of people at a time for free and give a good portion of their money to benefits and good causes arent like regular customers... I'll swing a deal somehow..(maybe some personal music tutoring fom Arlo? --who knows..).somewhere over the last 40 years the old windows were removed I'd like to do something similar to the originals and include quotes from Woody and Arlo songs , maybe some of Woodys drawings and other things pertinent to what it is now--Im still working out the idea--These things can take awhile (years usually--) When it comes to past I'll post em if you want..

Meanwhile--you wouldnt be the first person to take a pilgrimage up this way--come one up for TDay one of these years..or the Garbage Walk---I can even show you the famous dump

Someday I hope to take a pilgrimage their for Thanksgiving Dinner...but in some ways I have already been there... as dreamers are not limited by finite conditions or circumstances...They can travel anywhere they want...at any given time!!! For sure not the Best way to go...so I keep reality and hope on its course for a pilgrimage too :) !!!

You'll see exactly were I was if you watch the movie, as a matter of fact being a stained glass guy myself, Arlo wants me to do some work on the windows in the church now :) After spending the last umpteen thousand Thanksgivings always listening to "Alice's ", and knowing people all over the country do too, its still sinking in that I just spend TDay with the Guthrie Family. To me that was a cool event--almost surreal that I was actually there--It was a GREAT time. Im gonna become a regular there now. Heres Arlo's daughter, Sarah Lee and her husband Johnny Irion doing a song they played yesterday

The Request and the Response

(A Universal Prayer of Thanksgiving)

I asked God for strength, that I might achieve.

I was made weak, that I might learn humbly to obey.

I asked for health, that I might do greater things.

I was given infirmity, that I might do better things.

I asked for riches, that I might be happy.

I was given poverty, that I might be wise.

I asked for power, that I might have the praise of men,

I was given weakness, that I might feel the need of God.

I asked for all things, that I might enjoy life.

I was given life, that I might enjoy all things.

I got nothing that I asked for, but everything I had hoped for,

Almost despite myself, my unspoken prayers were answered.
