    here is another i came up with swiss herb and onion soup this is for 3 gals. so just modify 12 large white onions 1/2 gal chix stock 1/2 gal beef stock parsley,dill,thyme'fresh garlic {1 tbs} 2 cups sherry black pepper 1/2 gal heavy cream rouix to thicken mop ssautee onions til carmelized add herbs cook 4 min deglaze with sherryand cook a few more mins add stock and cream bring to a fast boil simmer and add rioux seaso with white powder and garnish with love

    sorry shell but that just aint onion soup {but it would do in a pinch} here is the real thing 5 onion soup you will have to wing the ingredence as the recipe i have is for about 4 gal. remember i was a chef ok white onion red onion leeks shallots scallon garlic carmelize onion except scallion add a good splash of sherry thyme beef base or stock chicken base or stock onion base salt pepper cook a while longer add water when done add scallions and the the secret ingredient.......add duck drippings if you have some i alwas did in the resteraunt

    don't get me going on soups! it is my favorite thing to cook! i will return when i am not haveing a rhine wine melt downthis, time of year is for cold soups like cantalope or strawberry and champaingor gespacho{sp} i will return with simple but great soups how about a 5 onion soup?

  6. a corps guy once tried to give me a melting it was easter morning and there was twig my family and i went it started at 10 and i thought for sure it would be over by noon it wasn't we had plans to be at my folks for dinner at 12:300 so at 12 we quitly left the next time i saw him the young punk tried to do a craig imatation on me spittle and all so just spit on the floor and left oh this is the same punk when he came to our town who needed a car for the year i lent him one of mine a few months later it needed tires he wanted me to buy them i just took the keys away from him and told him to take a cab home face meltings for me? nope i would't put up with them
  7. here is what i do sometimes drunken chicken: here is the rub. minced garlic ans kosher salt rosemary basil montreal steak seasoning garlic powder mop. wash and dry a whole chicken{no, not in the washer,dryer} place a clove of garlic in a 3/4 full beer can woops after you give the bird a rub outside place the bird on the beer can it stands up{beer can in a baking dish} put on grill or oven go to your favorite pub ,have a beer come home an hour or so later and eat chicken

  14. rocky i think you owe that young man a big apolloge {but you won't} he was trying to educate us he is serving his country and protecting your sorry arse while you and your family sleep how many years heve you served your country?{ i apolagize if i am wrong} that young man,and every other young man and women, who have all of those letters after name,worked and earned them they are not given out without merit in my opinion college is easier to put a few letters afteryour name well?????

    Fondue

    we used love to fondue as a twig it was a fun night and yummy!!! i haven't done it in years be sure to use peanut oil ,eagle sorry you had a bad experience we had fun
  23. cindy any commercial resteraunt supply place in your area is the place to go look for the used stuff too it is hard to hurt the good stuff it may not look pretty to martha steward but it works all of my home equipment ain't pretty but it works i,e. sautee,fry pans pots and kettles etc don't be afraid to spend money to but GOOD knives i will repeat Good knives you will never have to buy more costly? yes but worth it never mind the things on tv i paid over $700.oo for my 7 ice carving chisels i will never buy another set 'cause they are quality. i don't use them anymore so i am going to give them to some deserving kid going to culinary school
